The Cantabrian Sea provides the coastal towns and villages with the best of its fruit, products forming an inseparable part of the local gastronomy. Fish and seafood are the essential basis of numerous typical Basque specialities. These products are at the origin of dishes famous all over the world, such as “Hake koxkera-style”, “Squid in its own ink sauce”, “Squid with onions” (typical of Zarautz), or "Cod Biscay-style”. Zarautz, a coastal, tourist town par excellence, is an ideal spot to taste all of these fish dishes.

Zarautz enjoys the perfect climate and conditions to grow vegetable gardens, and the quality of their products, is on view at any market. Milk and its by-products are likewise enormously traditional, outstanding among which are cheese and junket, a typical Basque dessert. Grass-fed veal, grazed on the surrounding mountains, suckling pig or free-range chicken complete the diet offered by the land.
